Cajun Chicken Bell Pepper Soup

Hi all! Merry Christmas Eve!

I have been so busy lately I haven’t been able to eat dinner, let alone post anything! Once Christmas and the new year roll over I’ll be able to post more often πŸ™‚

But here is a Quick soup I made for my family this last week! Enjoy πŸ™‚

This soup is fast and easy, but so good! I hope it will make for a quick night dinner for you, too!

Ingredients:

  • 3 bell peppers (red, yellow, orange)
  • 2 1/2 cups white rice
  • 3 chicken bouillon cubes
  • 2 cups shredded chicken
  • 1/4 cup olive oil
  • 1/2 white onion
  • Cajun seasoning
  • Salt & pepper

First, you’ll dice up your onions and bell peppers, whatever size you like! Add your olive oil to your soup pot. Add in your spices.. I used cajun seasoning, salt, pepper, red pepper flakes and some garlic. I don’t measure! Just everything to taste πŸ™‚Β Toss your bell peppers and onions into the pot and simmer with a lid for about 10 minutes or until vegetables become soft.

After your veggies are soft/translucent, you will add water into your pot, about halfway up the pot. At this point you will add in your 3 chicken bouillon cubes. Stir and taste. Add any spices you need that I named above or water depending on your taste! Like I said, I do everything to taste, I hardly ever measure. Next you will need to add your un-cooked white rice and cooked shredded chicken.Β  Cover your soup and simmer on med/low heat for about 15-20 minutes stirring occasionally. Once you’re rice is soft, you’re done! That’s it! Enjoy this easy & quick soup for your next dinner. πŸ™‚
