Roasted Butternut Squash Soup

Holy cow- I am so full right now I can hardly move. I’m finishing up my second bowl as we speak! And my other half must be content because he is sound asleep on the couch and he barely finished his 10 minutes ago. This soup was so good! Its a little sweet and a little spicy. If you choose to make it that way! We like a little spice in our foods! Well- he likes a lot of spice, so we compromise 🙂 Anyways! this was done in about an hour and 15 minutes! Its fairly easy with minimal ingredients. I didn’t follow a recipe on this but TRUST me it’s really, really good!

Ingredients:

  • 1 butternut squash
  • 1 white or yellow onion
  • 1/2 clove garlic
  • 1/2 cup olive oil or coconut oil (I used coconut)
  • Chile powder
  • Oregano
  • Garlic powder
  • Sour cream
  • Salt & pepper to taste
  • Chicken bouillon cube/powder

First, Preheat your oven to 375 degrees. Next, you’ll need to wash and peel your butternut squash. This can be a little challenging sometimes, so I pop it into the microwave for about 3 minutes to soften it up. After you have peeled the squash, cut it right in half and remove the guts & seeds. From this point cut the squash up into squares (maybe 2 inch or so) and lay them in to a baking dish. Next, quarter one whole onion and toss it in the same dish along with 1/2 clove of garlic. Season to taste with garlic powder, Chile powder, salt & pepper. I’m a spice fanatic, so seriously just do what you think is best. I can go a little crazy LOL. At this point, you will drizzle your 1/2 cup oil of choice all over the veggies and toss with your hands. foodblog

Pop in the oven for 50-60 mins or until squash is tender.

Once veggies are cooked and tender, you will scoop them into a blender/food processor and blend with some water until you get desired consistency for your soup. Transfer into a stock pot, add your chicken bouillon cube & simmer. That’s it!

If the soup is too thick, thin it out with water. If it is too thin, add in some cornstarch.

I garnished mine with a dollop of sour cream, red pepper flakes, oregano and pepper. I’M ADDICTED TO PEPPER. #givemeallthepepper. This soup was so good & I’m sure it will be just as good for lunch tomorrow! Enjoy 🙂
